Sausage & Gravy Breakfast Casserole

So yummy!! I made this to sell in the cafe at our church to raise money for my husband and daughter's mission trip to Ninos de Mexico.

Ingredients:

1 lb Spicy Breakfast Sausage
2 pkgs of Hashbrowns (raw) (I used 4 C dried from food storage...they work great)
1 stick butter, melted
4 C Cheddar Cheese
6 Eggs
1/2 tsp salt
2 C milk
1 can Cream of Mushroom Soup (Sub homemade...even better)

Instructions:

  1. Crumble and brown the ground sausage. Drain and discard excess grease.
  2. Preheat the oven to 350 degrees. 
  3. Spread hashbrowns into a 9x13 pan; pour melted butter over the top.  Sprinkle with salt.  Bake in oven for 10-12 minutes or until lightly golden brown. 
  4. Remove from oven, sprinkle the browned sausage and 3 C of shredded Cheddar cheese on top.
  5. Beat the eggs in a mixing bowl until smooth; add 2 cups of milk, 1 can of soup and whisk until evenly blended. Pour the egg mixture over the the top. Top with the last cup of shredded cheese.
  6. Bake in the preheated oven until firm and golden brown, about 1 - 1 1/2 hours.
  7. Can be prepared and refrigerated overnight.

Roasted Garlic Sausage & Veggie Salad

This is great served over any fresh salad greens....spinach/spring mix or stuffed in a pita.

Ingredients:
1/2 C fresh Lemon/Lime Juice
2 tsp Extra-virgin Olive Oil
1 Tbs Balsamic Vinegar
1/2 tsp Oregano
1/2 tsp Basil
Dash of Salt & Pepper
2 C Cherry Tomatoes, halved
1 C Red Bell Pepper, strips
1 C Green Bell Pepper, strips
1 (12oz) pkg - Roasted Garlic Chicken Sausage (comes fully cooked), diced
1/2 C Feta, crumbled
2 Tbs black olives, sliced
1 Cucumber, diced

Optional: Pita Bread, baby spinach &/or spring mix

Combine first 6 ingredients in a large bowl, stirring with a whisk. Add in the rest of the ingredients & toss well.

Honey Baked Lentils

Ingredients:
1 cup green lentils
2 cups stock
2 celery stalks, sliced
1 carrot, diced
1 potato, diced
1 bell pepper, diced
2 tbsp honey
2 tbsp tamari or Soy sauce
4 tbsp coconut oil
1/2 tsp ginger
1 clove garlic, minced
1 small onion, diced
salt & pepper

Stir all ingredients together. Bake in a covered dish at 350 until tender (about an hour and a half).

Options: Add in cooked ground sausage (my fav), ground beef, cooked chicken or flaked wild salmon.

Sausage Polenta Bake

Ingredients:
2 1/2 cups yellow cornmeal/polenta
1 tsp Celtic Sea Salt
4 cups boiling water
4 cups warm raw grass-fed milk
1/2 cup Parmesan cheese
1 lb ground sweet/spicy sausage
1 (26oz) jar or homemade spaghetti sauce
1 1/2 cups shredded Mozzarella cheese

Directions:
Preheat oven to 350 degrees F

1. In a large saucepan, combine polenta & salt. Gradually add in boiling water, whisking constantly. Then add warm milk slowly while whisking. Continue to cook and stir over medium heat for another 5-8 minutes or until mixture comes to a boil and expands. Remove from the heat. Whisk in grated parmesan cheese thoroughly.

2. Spread polenta equally between TWO - 13x9 greased baking dishes (I used coconut oil). Bake uncovered in a 350 degree F oven for 20-25 min or until "set". Meanwhile, in a large skillet, cook sausage over medium heat until no longer pink; drain and add sauce. Cook until heated through.

3. Spread sausage/sauce mixture over ONE of the polenta baking dishes. Top with shredded mozzarella. Bake BOTH dished another 12-15 minutes or until cheese is melted.

Let stand for 15 minutes before serving.

Sausage Balls

This started as the Paula Dean sausage ball recipe but I changed it too suit our family.

YUMMY Sausage Balls

Ingredients:
1# package ground sausage (raw)
2 cups baking mix (I used Pamela's GF baking mix)
4 cups grated Raw Sharp Cheddar
1 large egg
1/8 tablespoon pepper

Dip: 1 cup mayonnaise 1/4 cup ketchup

Preheat the oven to 375 degrees F.

Combine all ingredients in a large glass bowl. Mix well with your fingers. The mixture will be crumbly. Form into 1 inch balls, squeezing the mixture so it holds together, then rolling it between the palms of your hands to form balls. Place the balls on the baking sheet.

Bake for 18 to 20 minutes or until golden brown. To prevent sticking, move the balls with a spatula halfway through cooking.

To make the dip, combine the mayonnaise and ketchup. Serve with sausage balls.
